Shrove Tuesday Pancakes

Homemade pancakes, a perfect meal for Shrove Tuesday.

- 2 Cups all-purpose flour
- 1 Tsp salt
- 1/4 Cup Granulated sugar
- 1 Tbsp baking powder
- 2 eggs
- 1 1/2 Cups milk
- 1/4 Cup vegetable oil
- 1 Cup water (or less)
In a large bowl or in a blender whisk together flour, salt, sugar, baking powder. Beat eggs and add to dry mixture along with milk, oil and enough water to make a thick batter that can be easily poured.
Pour approximately a 1/2 cup of batter into a hot greased pan or griddle and cook until the batter bubbles, then flip over and cook another 2 minutes or so until both sides are nicely browned. Put oven on warming option if you have it or around 140 degrees F. Place cooked pancakes on a plate or tray covered with foil in the oven to keep warm until served.
